Y​im Sreymuch is a 21-year-old cake chef. Although young, she bakes all sorts of cakes at Tous Les Jours bakery in Phnom Penh. Before working at the bakery she spent one year studying cooking with the NGO Pour un Sourire d’Enfant.

“Tous les Jours thinks not only of the flavour and decoration of its cakes, but also the quality of the cake,” said Sreymuch, who added that baking a cake requires time for the baker to think about what he or she is making.

There are three kinds of cake in Tous Les Jours, including the fresh cream cake, mocha butter cream cake and choco butter cream cake. These three kinds of cake have over 20 styles of decoration. The cakes come in the shapes of squares, triangles, circles, hearts, strawberries, apples and bears. Special events, such as Valentines Day and Mothers Day, include special designs.

She spends only five to six minutes to decorate a single cake, which she said is not too difficult if you know how to make it correctly.

Logos are also an important part of the cakes.

“Every cake must have the logo on it,” said Sreymuch.

“The shape of the logo depends on the size of the cake. The small one needs the oval shape, the medium needs the square logo, and the big cake needs the big round logo.”

“Favour is very important, and the shape and decoration needs to look very nice as well,” she said, adding that it takes patience and confidence to do her job well.

Tous Les Jours is very specific in its designs and does not take custom orders from customers, unless the modification consists of at least 20 to 30 per cent of the original design. However, Sreymuch said that the cakes are popular due to their unique style and flavours.
